Nada</title><content type='html'>Dois olhos, mesmo córtex.&lt;br /&gt;Um cego outro atento. Tratavam-se por Tudo e Nada, irmãos e vizinhos de janela, trocavam impressões sobre o que rolava. Cada um com sua opinião sobre as coisas. Tudo era expansivo e claro, Nada era filosófico, pensativo. A vida deles era boa e tranquila, Tudo via e descrevia  ao Escritório Central e Nada sentia e meditava. Quando Tudo não entendia o que rolava, Nada traduzia e o consolava - melhor nem ver. Com o tempo, Tudo começou a ter uma cortina que evitava ver claramente, Nada, acostumado com o escuro, entendia Tudo. &lt;br /&gt;Quando o Escritório Central parou de funcionar, Tudo virou Nada. Será que precisamos de um caso criminal pra virar celebridade de vez em quando? Será a nova versão do circo romano, os leões substituídos por rotweillers? Quem é nosso Cesar? Quais os critérios de edição?&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;O outro lado tenta calcular o quão desastrosa é a banalização de crimes de violência contra as mulheres. Vira matéria de consumo rápido, entretenimento, e claro, piada e sacanagem. Com o excesso de exposição, começa a encher o saco. E amanhã tem outra tomando gravata, tiro, facada, bordoada, sendo queimada por mais um babaca selvagem e covarde, que não tendo coragem de bater em homem, resolve descarregar na mulher.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Os dois lados do cérebro se juntam, e aí somem as dúvidas e aparecem as certezas. Fudida mesmo tá é a família  daquela fulaninha, que o marido também encheu de porrada, queimou com cigarro e depois degolou. Todo fim de ano eu e grandes amigos nos encontramos para degustar bons vinhos e testar algumas receitas. Os propietários LA e Carmem são grandes anfitriões e recebem os comensais com alegria e carinho e os cozinheiros são quase todos que aparecem com suas receitas e ingredientes del mare. Quem não conhece essa cidade que fica no litoral do Paraná, e é fã de frutos do mar vale a pena visitar, tem um mercado de pescados excelente na cidade. Mas a verdade é que paella vem de "patella" uma bandeja usada na roma antiga para colocar as oferendas aos deuses em rituais de fecundação da terra, e assim foi batizada em meados do século XV pelos espanhóis. Uma marrrrrravilha, du carrrrrai. Segue a receita para todos se deliciarem. Bon apetit!&lt;br /&gt;&lt;br /&gt;Receita 'Menu Confiança': Leitão com farofa de milho e macadâmia (19/10)&lt;br /&gt;Ingredientes:&lt;br /&gt;Marinada &lt;br /&gt;250g sal&lt;br /&gt;6 dentes de alho picado&lt;br /&gt;1 pimenta dedo de moça picada&lt;br /&gt;1 colher de sopa de cominho em pó&lt;br /&gt;3 colheres de sopa de urucum&lt;br /&gt;3 colheres de sopa de açúcar mascavo&lt;br /&gt;100ml cachaça&lt;br /&gt;100ml vinho branco&lt;br /&gt;tomilho, louro e alecrim a gosto&lt;br /&gt; &lt;br /&gt;Modo de preparo&lt;br /&gt;Misture todos os ingredientes em um recipiente.&lt;br /&gt; &lt;br /&gt;&lt;br /&gt;Leitão &lt;br /&gt;1 leitão de 8kg inteiro&lt;br /&gt; &lt;br /&gt;Modo de preparo&lt;br /&gt;Corte o leitão e fure a carne com um garfo, com cuidado para não furar a pele. Coloque-o em um recipiente e cubra com a marinada. Cubra com papel alumínio e leve à geladeira por 2 dias.&lt;br /&gt; &lt;br /&gt;&lt;br /&gt;Farofa de milho e macadâmia &lt;br /&gt;500g de flocos de milho&lt;br /&gt;400g manteiga&lt;br /&gt;200g macadâmia picada&lt;br /&gt;160g cebola picada&lt;br /&gt;40g alho picado&lt;br /&gt;80g uvas passas&lt;br /&gt;2 maçãs verdes sem casca, cortadas em cubos&lt;br /&gt;1 pimenta dedo de moça picada&lt;br /&gt;sal e coentro a gosto&lt;br /&gt; &lt;br /&gt;Modo de preparo&lt;br /&gt;Em uma panela, derreta a manteiga e acrescente a cebola, o alho e a macadâmia. Deixe refogar por um tempo e junte as passas e as maçãs. Cozinhe por mais 5 minutos e misture os flocos de milho. Acrescente o coentro e a pimenta dedo de moça e tempere com sal.&lt;br /&gt;Retire o leitão da marinada e recheie com a farofa. Costure com um barbante, coloque em cima de uma grelha e cubra com a marinada. Asse a 150º durante 3 horas, molhando sempre com a marinada. Acrescente água se necessário.&lt;br /&gt; &lt;br /&gt;Finalização &lt;br /&gt;Retire o barbante do leitão. Para fazer a pururuca, utilize uma salamandra ou jogue azeite bem quente por cima. Quando criança , meu favorito era o das Lojas Americanas da Rua Direita. Adolescente, fiquei fã do cachorro quente da Yara, na Rua Augusta. Mais crescidinho, aderi ao carrinho da madrugada na Praia de Pitangueiras, no Guarujá. Já adulto e independente economicamente, passei a visitar Nova York com frequência e, consequentemente, as carrocinhas de cachorro-quente da 5a avenida. Já comi também cachorro-quente na Alemanha, onde esse sanduíche é famoso pela qualidade das salsichas, e em Montreux, na Suíça, numa daquelas maravilhosas barraquinhas de alimentação que eles montam na semana do Festival de Jazz.Mas nos últimos anos meu consumo externo de cachorro-quente caiu sensivelmente, na exata proporção do aumento de almoços e jantares de caráter profissional, que acabam sempre acontecendo em ótimos restaurantes, que preparam finas iguarias, mas sequer cogitam a idéia de colocar um prosaico cachorro-quente nos seus cardápios. Por outro lado, se o meu consumo externo de cachorro-quente caiu, meu consumo caseiro subiu, e tudo graças a um fato ocorrido há 5 anos. Eu estava em Paris, e Paris obviamente já possuía o cassoulet de Benoît e a alta gastronomia do Alain Ducasse e do L'Ambroisie, mas, naquele dia, o que eu queria mesmo era comer um cachorro-quente. Entrei no Brasserie Lipp, em St-Germain-des-Près, que eu sabia que não tinha cachorro-quente, mas que eu sabia que tinha um garçom com um magnífico senso de mau humor, chamado Gérard, que me conhecia, e me arrisquei : Gérard, você não faria um cachorro-quente?" Com cara de não, ele respondeu que sim e depois de alguns minutos depois voltou com a iguaria, pra mim, naquele momento, melhor do que qualquer prato do Georges Blanc ou do Laurent Suaudeau. O cachorro-quente era tão bom que resolvi pedir a receita, que, desde aquele dia, eu mesmo preparo em casa ou ensino para as pessoas mais queridas. Virou uma exclusividade, mas, como este livro do Zé Hugo é também bastante exclusivo, aqui vai a receita para os leitores.&lt;br /&gt;Ingredientes:&lt;br /&gt;Pão baguete, salsichas, queijo emmenthal, queijo parmesão e mostarda Dijon.&lt;br /&gt;Modo de Preparar:&lt;br /&gt;Ferva as salsichas (as grandes são as melhores) e corte a baguete exatamente do tamanho de uma salsicha. Corte duas lascas de emmenthal iguais a baguete já cortada, mais dois centímetros maiores do que ela no comprimento. Corte a baguete ao meio, formando duas canoas. Passe bastante mostarda na parte interna das duas canoas. Depois, coloque uma das lascas de emmenthal na canoa debaixo e rale um pouco de parmesão em cima. Faça exatamente a mesma operação com a canoa que vai ficar em cima. Coloque a salsicha no meio das duas canoas já preparadas e leve ao forno. Como as fatias de emmenthal são dois centímetros maiores que as canoas, observe cuidadosamente esse pedaço de queijo que ficou para fora até ele derreter. Derreteu, está pronto. Sirva acompanhado de uma taça de Gevrey-Chambertin. Acima tem o menu de um restaurante de Paris "Hostellerie de Plaisance" e me chamou a atenção o chef utilizar tapioca, leite de coco e coentro. É o Brasil inspirando a França. Mas vamos ao que interessa. Atualmente a gastronomia virou moda, vários jovens ingressam em faculdades, cursos profissionalizantes e me pergunto as vezes onde ficou o prazer de sentar à mesa. Será que esquecemos do ritual, a formalidade e do respeito à mesa? Acho que sim. Nos restaurantes hoje, a falta de respeito prevalece na grande maioria, digo isso quando no cardápio esta escrito Galinha d' angola e vem galinha comum, quando é risotto e vem arroz com qualquer coisa, quando o molho é rôti e é em pó, e por aí vai. Todo restaurante ou até mesmo um boteco que se propõe a comercializar comida, tem que se preocupar com a preparação, a matéria prima, higiene e etc, e da descrição do prato em seu cardápio. Existem comensais que comem a estética jogada no prato, adoram, fotografam, esses sim estão esquecendo do principal, do prazer à mesa. Quando um cozinheiro sério e profissional cria um prato ele põe ali a sua história, o seu amor, o seu tempero, o seu carinho e não caldo knoor e enganação. Esse não é só um desabafo, é a realidade e como aspirante a profissional da cozinha me preocupo com a banalização da gastronomia. Que aliás, é um ótimo restaurante e sua equipe de cozinha dá de goleada a muito restaurante de cidade grande. O menu que eu criei foi todo baseado ingredientes locais. De entrada foi a ceviche de tilápia com mousse de feijão de andu, ragú de carne de sol com polenta de pequi, depois ratatuille de legumes do norte de minas com carrê de cordeiro, risotto de manga com camarões flambados na cachaça. Foi super divertido e a cidade esta cada vez mais adepta aos novos ares gastronômicos. Sua carne vermelha, tenra e bastante gordurosa confere um sabor totalmente diferente do que o de granja. Tenho uma pequena criação e eu os alimento apenas com milho da própria fazenda, folha de bananeira e de vez em quando uma latinha de cerveja preta para acalmar os ânimos do chiqueiro. E para começarmos a semana bem light segue uma foto de um prato que eu criei : barriga de porco com tutu feijão, molho de tamarindo e um pouquinho de sal defumado. É hoje que a porca torce o rabo. O divulgador da nossa gastronomia para o mundo é o Chef Alex Atala. Tive o prazer de estar na sua cozinha por 7 dias e ver como ele trabalha. Primeiramente a seriedade e o profissionalismo são inquestionáveis, o controle de qualidade interno é 100% eficaz. Foi uma oportunidade única ver o "maestro" cozinhar. Na semana que estive lá, o Chef trabalhou como nunca e tive a oportunidade de ver a sua troca de cardápio relâmpago (de um dia para outro), como não havia a possibilidade de impressão, o novo cardápio foi feito a mão, por ele mesmo. Show de bola! O único ingrediente que fez um "up" na receita foi sal marinho da Île de Ré, que se situa na costa atlântica francesa, que ainda conserva o método clássico de colheita de sal. Este sal, o meu amigo publicitário Gomes Alzamora, que esteve em Cannes a trabalho, deu uma passadinha na ilha e trouxe dois vidros, um com ervas e outro com pimentas doces. Na receita usei o sal com ervas, e degustei com um azeite de limão siciliano. O branco do Vale do Loire  bastante frutado e acidez perfeita acompanhou uma lagosta thermidor. O tinto de Saint Emilion, bastante encorpado, ao servir você sente um leve toque de ameixas frescas, este acompanhou um filet na crosta de alecrim e batatas anna. Tudo muito certinho, casamento perfeito. Vale a pena conferir quem estiver indo passear na europa ou se tiver um amigo igual ao meu que faça o carreto da França e ainda te convida para degustar. Na grelha uma tainha inteira pescada com anzol nos mares de Copacabana, aspargos frescos e um papillote de legumes (cenoura e beterraba) da fazenda e o famoso conhaque Fernando Del Castilla. A gastronomia é uma reunião cujo o melhor tempero é a conversa. Entrei de supetão no hotel quando estava passeando por Ipanema, e me surpreendi com o menu executivo do almoço deles. Tudo muito bem feito, o atendimento impecável e isso aumentou bem o apetite. Ao contrário dos restaurantes que oferecem almoço executivo eles optaram de ter várias opções de pratos de entrada a sobremesa. A minha escolha foi : Lula recheada acompanhada de gnocci de azeitonas pretas e ervilhas frescas, risotto de camarão al limone e mil folhas do Fasano com quantidades bastante honestas por uma bagatela de R$ 78.00. Incrível, muitos restaurantes precisam aprender com o profissionalismo e a qualidade do empresário Rogério Fasano. Me surpreendeu o creme anglaise gelado servido na sobremesa com os pontinhos da fava de baunilha, que deveria ser normal nos restaurantes que se propõe a alta gastronomia. O mais bacana é que em Copacabana em frente o Hotel Sofitel tem uma banca de pescadores, onde comprei uma série de peixes frescos, alguns ainda vivos, pescados a linha. O Cherne é para uma receita da Marie Troisgros (avó do Chef Claude Troisgros) para um evento familiar (link da receita no you tube http://www.youtube.com/watch?v=IBlIOK-7bFM). &lt;br /&gt;O vermelho, namorado e o atum estou levando para meu amigo Caetano Sayão, grande mestre das artes culinárias que fará um churrasco de pescados para os amigos. Além de ser uma pessoa super especial sempre nos surpreende com um tempero novo, como as raspas de limão siciliano secos ao sol que confere um sabor extraordinário na grelha. O mais importante na lavoura é colocar a mão na massa, "bater" uma enxada de vez em quando faz bem a todos, principalmente para quem segue a carreira em uma cozinha profissional. Saber plantar, adubar, cuidar e colher nos ajuda entender melhor os alimentos antes de irem para a panela. Cultivo tudo de forma natural mas não sou um desses defensores dos orgânicos, se estiver crocante e colhido no tempo certo já me satisfaz. Para quem gosta do meio rural, plantar boas idéias é colher boas histórias.
